* Saturday, I taught Head Millennial a dish my family called Sauerkraut and Sweet Biscuits, but which is really more Sweet Dumplings in a glutinous sauerkraut stew. Me, warning the Millennial in advance: This is going to be extremely stinky, but delicious and full of Vitamin C. *Millennial sensibly turns the hood up fan up on high* This is something made on the stove top, so theoretically viable, but since the stove top is rapidly failing and heat is quite variable so things like boiling water and making pasta are still okay, but things like grilled cheese are right out, so I am not entirely sure this will work. Still we forge onward.
So explain how to set up the sauerkraut in water on medium heat while he mixes the batter. I give him the recipe. Me: You want to make this, but add an extra cup of sugar. Don't worry, the sour and sweet balance each other beautifully. Head Millennial: This says cold shortening? Me: It lies. It was written down in the '50's or '60's. Almost anything in this recipe set that says lard or shortening means butter or magazine unless there is an annotation that says no really use shortening. Use the same amount of butter. It will be fine. *Millennial gives me a skeptical look, but forges on.*
Millennial: What do I do with this batter? *Goes over there to help* Me: Okay, we turn up the heat now and stir the sauerkraut. Now we pour the batter on top. *Millennial gives me a concerned and skeptical look.* Okay, we let it heat for a bit, then put the lid on and put it on low. Come check it every ten minutes so so. Don't worry. It will be ugly. It is always ugly but very delicious. *I start wandering back to my sitting down project* I have no idea if this is German or Irish, but it is good, filling Winter food. Millennial: No wonder people think you are Polish. *I am amused*
As it turned out the Millennial did a bit of cleaning, but was tired. Me: want me to take you home? *Millenial casts a worried look back at the kitchen.* Me: It'll be fine. I'll cover it and turn it down. We could be gone half an hour and it would likely still be fine. If it burns a little on the bottom, no problem, but it likely won't.
Anyway, I took them home, which takes about fifteen minutes round trip that time of night. I adjusted the heat a little. Did a very careful stir to limit scorching at the bottom without damaging the dumplings to much. Covered it back up. Did a lung treatment. When I dished it out, it was perfect. Seriously. This is the best it's been in like three years. Neither over cooked or undercooked. Dumplings in the right size range and texture. Perfect mix of sweet and sour. Omnomnomnom!
* Thanks to incredibly kind donations, the immediate financial emergencies are at bay I should be able to cover the bill that is about to go critical and I think the housing tax. I will have a better idea how messed up March will be in about a week. I once again want to thank everyone for their support.
* Last Spring the head Millenial bought some hand sanitizer it turned out they didn't want, I'm assuming because of the offensively strong artificial smell. I can just tolerate it and it's otherwise good sanitizer, just really, really intense. I mostly only use sanitizer in the car, so this pump bottle doesn't get used that much. I did use it the other night and it finally hit me why it smells so familiar: It smells like priest. O.o

* Saturday, I taught Head Millennial a dish my family called Sauerkraut and Sweet Biscuits, but which is really more Sweet Dumplings in a glutinous sauerkraut stew. Me, warning the Millennial in advance: This is going to be extremely stinky, but delicious and full of Vitamin C. *Millennial sensibly turns the hood up fan up on high* This is something made on the stove top, so theoretically viable, but since the stove top is rapidly failing and heat is quite variable so things like boiling water and making pasta are still okay, but things like grilled cheese are right out, so I am not entirely sure this will work. Still we forge onward.
So explain how to set up the sauerkraut in water on medium heat while he mixes the batter. I give him the recipe. Me: You want to make this, but add an extra cup of sugar. Don't worry, the sour and sweet balance each other beautifully. Head Millennial: This says cold shortening? Me: It lies. It was written down in the '50's or '60's. Almost anything in this recipe set that says lard or shortening means butter or magazine unless there is an annotation that says no really use shortening. Use the same amount of butter. It will be fine. *Millennial gives me a skeptical look, but forges on.*
Millennial: What do I do with this batter? *Goes over there to help* Me: Okay, we turn up the heat now and stir the sauerkraut. Now we pour the batter on top. *Millennial gives me a concerned and skeptical look.* Okay, we let it heat for a bit, then put the lid on and put it on low. Come check it every ten minutes so so. Don't worry. It will be ugly. It is always ugly but very delicious. *I start wandering back to my sitting down project* I have no idea if this is German or Irish, but it is good, filling Winter food. Millennial: No wonder people think you are Polish. *I am amused*
As it turned out the Millennial did a bit of cleaning, but was tired. Me: want me to take you home? *Millenial casts a worried look back at the kitchen.* Me: It'll be fine. I'll cover it and turn it down. We could be gone half an hour and it would likely still be fine. If it burns a little on the bottom, no problem, but it likely won't.
Anyway, I took them home, which takes about fifteen minutes round trip that time of night. I adjusted the heat a little. Did a very careful stir to limit scorching at the bottom without damaging the dumplings to much. Covered it back up. Did a lung treatment. When I dished it out, it was perfect. Seriously. This is the best it's been in like three years. Neither over cooked or undercooked. Dumplings in the right size range and texture. Perfect mix of sweet and sour. Omnomnomnom!
* Thanks to incredibly kind donations, the immediate financial emergencies are at bay I should be able to cover the bill that is about to go critical and I think the housing tax. I can just tolerate it and it's otherwise good sanitizer, just really, really intense. I mostly only use sanitizer in the car, so this pump bottle doesn't get used that much. I did use it the other night and it finally hit me why it smells so familiar: It smells like priest. O.o
